Job Summary:

The Restaurant Operations Director is a pivotal role responsible for overseeing all aspects of the restaurant's operations, with a focus on delivering exceptional dining experiences. This involves maintaining the highest quality of food and service, managing staff, and maximizing profitability.

This leader must have a minimum of five years of experience in fine dining or upscale restaurant management, strong financial acumen, and an impeccable understanding of the luxury hospitality environment.

Key Responsibilities:

  1. Oversight of day-to-day operations to ensure smooth service flow, adherence to fine dining standards, and optimal guest satisfaction.
  2. Maintenance and enforcement of quality control standards in food preparation, presentation, and service.
  3. Collaboration with the executive chef and kitchen team to align the menu with the restaurant's brand, quality, and guest expectations.
  4. Leading by example in delivering a memorable guest experience; consistently engaging with guests, addressing their needs, and resolving any issues promptly.
  5. Developing and maintaining relationships with regular patrons and VIPs to promote repeat business and a loyal customer base.
  6. Continuously seeking and implementing ways to enhance the guest experience, from ambiance to personalized service.
  7. Recruitment, training, and management of a high-performing team, including front-of-house, bar, and kitchen staff.
  8. Conducting regular training sessions on service standards, luxury hospitality, and brand values to ensure all staff meet and exceed guest expectations.
  9. Scheduling and oversight of staffing levels to maintain efficient operations while managing labor costs.
  10. Preparation and management of the restaurant's budgets, including revenue targets, expense control, and cost of goods sold.
  11. Monitoring daily, weekly, and monthly sales, labor costs, and other KPIs to ensure profitability.
  12. Collaboration with the finance team for regular reporting, forecasting, and setting financial goals aligned with overall business objectives.
  13. Working closely with the marketing team to develop and execute promotional activities, special events, and menu launches to attract new and repeat customers.
  14. Analyzing market trends and customer feedback to inform decisions on pricing, menu adjustments, and promotional strategies.
  15. Representing the restaurant at community and industry events to build brand awareness and drive customer engagement.
  16. Ensuring compliance with health, safety, and sanitation standards, as well as legal regulations relevant to fine dining.
  17. Overseeing staff training on all compliance requirements, including handling of food, alcohol, and customer interactions.
  18. Overseeing procurement and inventory control, working with suppliers to source the best quality ingredients and supplies.
  19. Managing relationships with vendors to ensure timely deliveries and negotiate favorable terms to control costs without compromising quality.

Requirements:

  • B.Sc./ H.N.D in Hospitality management or any field
  • Minimum of 5 years work Experience as General Manager in the hospitality industry, particularly restaurant, fine dining restaurant (not quick service restaurant)
  • Exceptional skill in hospitality management, leadership skill, general operations management and other relevant skills
  • Highly presentable with a proactive approach to maintaining excellent customer service
  • Strong understanding of luxury hospitality and fine dining service standards
  • Excellent leadership, communication, and team management skills
  • Proven financial acumen, with experience in budgeting, forecasting, and achieving profit targets
  • Proficiency in restaurant management software and MS Office
  • High attention to detail, with a passion for quality and excellence
  • Ability to work flexible hours, including nights, weekends, and holidays as required
  • A proactive approach to problem-solving and guest service
  • Professional Certification in hospitality, management is a must etc.
  • Ability to work flexible hours including evenings, weekends and Public Holidays as required
